Blended half onion, ginger, garlic, ripe chilies 🌶 and tomato for the gravy and cooked in oil + 1/2 tsp ghee. Salt, turmeric and kashmiri mirch to taste. Added paneer cubes and almond paste (can use cashew too. I had some almonds paste already so used it) Added malai and kasuri methi in the end. You can use coriander powder too.

Cilantro paneer

Before and after

The recipe is inspired by Sue ((Suchayita Bhattacharjee). The inspiration on skewers
  1. Cut paneer (at room temperature) into cubes. Marinate with cilantro , green chili and ginger paste, vinegar and yogurt for an hour before cooking.
  2. Cut red onions and red bell peppers (I  like the taste and color of red over green bell pepper, you may add orange , yellow or green too) into cubes. Saute them in non-stick with little oil or butter. Cook on low flame until the paneer begin to brown at the edges. Serve as an appetizer or with the main course.
I  also made Dal makhani, mixed vegetables, lemon rice and vermicelli kheer with it.

Grilled Paneer Sandwich

For Ruma
  1. I used leftover matar-paneer in this recipe. You can use fresh paneer too. Toss paneer (cut into cubes) in olive oil with diced onions, salt and cumin seeds. Then use a food processor to grate the mix.
  2. You can add mayo/ketchup, cracked pepper and stuff the bread grilled in a panini maker.
