Simple cucumber sandwich

 Hi all

After a hiatus, I plan to be more regular with my food blog. Here is a simple cucumber sandwich recipe for you that can be breakfast, eaten with afternoon high tea, or as a snack. 



Ingredients:

- Sliced bread (white, whole wheat, or your choice)

- Fresh cucumbers, thinly sliced

- Cream cheese or butter

- Salt and pepper to taste

- Optional: dill, mint, or other herbs for added flavor


Method:

1. Begin by spreading a thin layer of cream cheese or butter on one side of each bread slice.

2. Place a layer of thinly sliced cucumbers on one bread slice.

3. Sprinkle salt, pepper, and any optional herbs over the cucumbers.

4. To create a sandwich, add another bread slice, cream cheese/butter side down.

5. Remove the crusts from the sandwich for a more traditional look.

6. Cut the sandwich into smaller triangles or fingers for serving.


Enjoy your homemade cucumber sandwich!

Feel free to get creative by adding other ingredients like smoked salmon, radishes, or sprouts for extra flavor and texture.

Beef and mushroom sandwich

Beef and mushroom sandwich with onions, pepper, Worcestershire sauce, and provolone cheese.

Method:

  1. Cook sliced mushrooms in olive oil with pink salt and pepper. Add pre-cooked beef (for 12-14 ins in Worcestershire sauce, pepper, salt, garlic powder, chili flakes, cumin powder, and red onions, I used leftover beef medallions from dinner)
  2. Toast bread on a pan or in oven until crunchy, but not browned.
  3. Add a slice of provolone or your prefered cheese. Top with pickled jalapeño for some extra crunch.

Grilled Paneer Sandwich

For Ruma
  1. I used leftover matar-paneer in this recipe. You can use fresh paneer too. Toss paneer (cut into cubes) in olive oil with diced onions, salt and cumin seeds. Then use a food processor to grate the mix.
  2. You can add mayo/ketchup, cracked pepper and stuff the bread grilled in a panini maker.

Roasted red bell pepper hummus and ham sandwich

Some of you might want to make hummus at home and skip the preservatives. Also, hummus is a healthier sandwich topper than cheese or mayo.

I found a likeable taste in Cedar's Roasted red bell pepper hommus, and Archer's Farms applewood smoked Sliced ham for this quick fix.

Ingredients:



and bread of your choice, or wrap it in a tortilla.


Goat cheese and sun dried tomatoes make delicious sandwich or cracker topping.

Another quick-fix can be mashed avocado, hummus and salami on pita, or with thinly sliced tomatoes in a sandwich.
