Breakfast eggs #1

Make a bed of mushrooms, red onions, cilantro, and green chilies. Sprinkle salt. Break 4 eggs (for 2 people) carefully. Sprinkle some more salt. Mix half cup milk with 1 tsp cream cheese and spread evenly on the eggs. Cover and cook for a few more minutes till the milk boil to a creamy goodness.

Egg curry with coconut milk


  1. Boil 4- 6 eggs in a sauce pan with salt and water on medium heat.
  2. Mince onions, garlic, ginger, serrano chilis and cilantro and fry in olive oil along with whole cumin seeds or mustard seeds, crushed cardamom and cloves.
  3. Fry till the oil separates, add coconut milk, stir.
  4. Peel  the egg shells,  make shallow slits all over and add to the gravy. Turn on low and simmer gravy thickens further. Add freshly chopped cilantro.
You can cook paneer/tofu or soft vegetables like carrots, squash in similar fashion.

Egg Biryani


  1. Boil eggs in water. (on low heat, I discovered that hard boiled doesn't necessarily mean on high heat). I used 4 eggs for my required number of servings. Pour cold water, remove shells. Cut in half.
  2. Finely slice onions. Fry in 1 -2 tsp ghee, with whole cardamom(4 green, 2 black), 1 cinnamon stick, 2 bay leaves torn in halves, about 4-5 cloves and peppercorns. Add your preferred ready-made biryani powder to the mix and a little salt.  You can add two slit green chilies here.
  3. When the onions are about done, place the eggs, albumin side down and continue frying in  low heat. Turn once and remove the eggs. (Or else the eggs might break. Doesn't look good)
  4. I use parboiled or pre-cooked rice . Add in installments while you stir well. 
  5. When the rice is about cooked, add the eggs again. Sprinkle garam masala (preferably made at home) and cilantro leaves. 
  6. Pair it with raita. I enjoyed it with mixed vegetables. You may also  prepare a meat dish to go with it.

Egg Do Piaza


  1. Boil 6 eggs in water. Remove shells. Make small incisions with a knife on 4 sides of each egg so the spices get through.
  2. Thinly slice onions and fry in a wok. Add crushed cardamom,cinnamon powder (I use more than usual for this dish)and cloves.
  3. Add diced tomatoes, slit green chilies,salt, turmeric, red chili powder. Minced garlic and ginger if you want to
  4. Cover and cook till oil separates. Add the boiled eggs. Add ghee and cilantro just before turning off the heat.

Baked spinach frittata

What I did:

  1. Blanch chopped spinach in microwave for 3-5 mins, Cool and drain.
  2. Beat eggs, and blend it all in food processor- spices of your taste, green chilies, half an onion, spicy brown mustard, tomato ketchup/sun-dried tomatoes, cheese (I used Italian 5 cheese blend- goat  cheese or parmesan goes well too), salt and pepper.
  3. Bake in an oven till done (pre-heated at 350 F for 30 - 45 mins)

Pavlova




For Dipanwita Boudi

4 egg whites
Fine sugar
Vinegar
Vanilla essence
Cool whip
Fresh strawberries/other canned or fresh fruits

Method

  1. Beat egg whites at room temp, add sugar gradually, continue beating
  2. Add 2 - 3 tsp of white vinegar or lemon juice and 1 tsp vanilla essence
  3. Bake in a pre-heated convectional oven at 450 F for 10 minutes, then at 350 for about 45 mins to 1 hrs.
  4. When you see the meringue rising, switch off the oven and leave it in the oven for another 30 mins to save it from any temp shock. It's ok if you see cracks.
  5. Spread cool whip generously, and add fresh fruits like sliced strawberries, blueberries or canned and peeled orange
I added some strawberry preserves on the slice, but that would defeat the purpose if you want it as a low-fat, low-sugar desserts. Also, you can use low-fat cool whip instead of the original if you are counting calories.

    Dimer chop (Egg croquette)


    For Baishampayan Da:

    Method:
    1. Boil eggs and  cut into quarters(so the croquettes are not too big). Keep aside.
    2. Boil potatoes, mash them well and saute lightly with diced onions , salt , cumin powder, amchur, finely chopped cilantro and garam masala
    3. Embed the egg in the potato mixture, and shape them into desirable shape (round or elliptical). 
    4. Dip alternately into beaten egg and panko flakes/bread crumbs. Repeat.
    5. Deep fry in hot oil. Serve hot with ketchup, chaat masala and raw onions.
    You may also make vegetables, fish or chicken croquette using the same technique

    Tortilla de patatas in yogurt sauce

    This is something my Mom made when I was a kid. Baking makes my job easier.

    All you need is:

    1. Eggs - 5-6, beaten
    2. Potatoes- small, 2, boiled and mashed
    3. Green peas (optional)
    4. Cilantro
    5. Cumin seeds
    6. Salt, turmeric
    7. Onion grated
    8. Ginger grated
    9. Garlic grated
    10. Bay leaves
    11. Yogurt
    12. Milk(optional)

    1. In a small (so it doesn't spread out too thin) baking tray that has some decent height, pour the beaten eggs with mashed potatoes and peas. You can add salt, pepper, a little of the grated onions, garlic powder(or grated), ginger powder(or grated) Bake till it is nice and fluffy. (You can choose to fry this, but why sweat?)Those who like chilies, can add chopped green chillies too. It is good enough to eat now. It is like the Spanish Tortilla de patatas. But let's wait..
    2. For the sauce, fry cumin and bay leaves, saute a little onion, garlic, ginger. Add yogurt.
    3. Cut the potato-egg omelet into cubes, add to the sauce. Add cilantro to garnish.

    Here is a recipe for Omelet curry, using the same ingredients, but the eggs and potatoes are used separately.

    Deviled eggs


    Chilled Deviled eggs make great Hors d'œuvre.

    Here's a version of my basic deviled eggs.

    Ingredients:
    5 eggs
    1 tablespoon spinach artichoke dip (you can use your preferred salad dressing, mashed potatoes, cheese, mayo, garlic powder)
    salt and pepper to taste
    1 pinch paprika

    Directions
    Place eggs in saucepan, add salt and water. Cover and bring to boil. Remove from heat, and let eggs sit in hot water for 10 to 12 minutes. Remove from hot water and cool.
    Peel and cut in half lengthwise. Remove yolks, combine with dip and salt and pepper. Mix together until smooth.
    Refill each egg half with the yolk mixture and sprinkle with paprika.
